Estava pesquisando sobre NTP + Ubuntu, e acho que encontrei uma thread
interessante:

"To install chrony you will need to remove the NTPD software that comes
standard with Ubuntu."

Não conhecia esse tal de "chrony", mas pelo pouco que li, ele é mais
indicado para ambientes em que a rede fique fora por algumas horas. Vou
continuar lendo e fazendo testes.
