Obrigado Christian e pessoal,
O Interessante é que mesmo após configurar as diretivas ServerTokens e
ServerSignature, as ferramentas de checagem de vulnerabilidades como Nessus
e Retina trazem essas informaçoes.
A única forma que encontrei foi essa ...
